Ingredients:
1kg king prawns
1 tbls chilli paste
Soy sauce to taste (ive used dark for colour)
2 heaped tbls Oyster sauce, more if you like
1 large onion
1 red pepper
2 whole pakchoi
Handful of beansprouts
Good noodles, i've used prawn infused egg noodles, cook and refresh with ice water so they dont go soggy.
A few water chestnuts
A few bamboo shoots
And a small bowl of sliced cabbage and carrots I had in fridge
You can vary the veg to your taste.. e.g chinese cabbage, green peppers etc
Prep all your veg as this is a quick recipe.
In hot oil start your chunky onions first, when slightly roasted add the pak choi stems, stir fry a minute, then add the rest of the veg bar the bean sprouts and pak choi leaves.
Stirfry for about 5 minutes and add your sauces, ive used the chilli sauce in the picture and good oyster sauce.
Now add your prawns, once they start changing colour, add your pakchoi leaves, a minute or so they will whilt, then add the noodles and mix well.
You should now add the soy, keep tasting the slight sauce at the bottom of the pan till right.
The last thing is to add the beansprouts, as you want them to stay crunchy.
By now your prawns will be cooked, you can keep the slight sauce or reduce it down.
I sprinkled on toasted sesame for crunch.
