Here is my "Zuccotto di pandoro stuffed with mascarpone and wild berries".
I recycled a pandoro received at Christmas and left over.
Below I describe the recipe to prepare this delicious dessert.
for 4 persons-
- 450 gr of pandoro
- 250 gr of mascarpone
- 2 egg yolks
- 100 gr of berries
- 30 gr of sugar
- 50 gr of icing sugar
- 100 gr of whipped cream to
- taste of limoncello
- icing of black cherry
For the syrup:
- cherry to taste
- 25 grams of sugar
- 1 orange
- Mix the egg yolks with the mascarpone, sugar and a little limoncello.
- Mix the berries and mix them with the whipped cream of mascarpone.
- Line an aluminum zuccotto with the pandoro cut into slices (previously moistened with a syrup obtained by cooking the cherry with the sugar and orange peel for a couple of minutes over low heat).
- Stuffed with the mascarpone and wild berries cream and top with more pandoro slices.
- Let it rest in the fridge for at least 30 minutes.
- Turn out the zuccotto, decorate with icing sugar and black cherry icing.
