শুভ সন্ধ্যা বন্ধুরা,
শীতের সন্ধ্যা মানে ভিন্ন কিছু উপভোগ করার সুযোগ, ঠান্ডায় কিছুটা উষ্ণতা খোঁজার জন্য গরম কাপড় কিংবা গরম কিছুর সহযোগিতা নেয়ার প্রচেষ্টা করা। যদিও শহরের পরিবেশে শীতের প্রকোপ ততোটা বেশী উপলব্ধি করা যায় না, ততোটা উপলব্ধি করেন গ্রামীন পরিবেশে থাকা মানুষগুলো। মাঝে মাঝে তাদের কাছে শীতের প্রকোপ উপভোগ্য না বরং যন্ত্রনাদায়ক হয়ে উঠে।

Winter evenings mean a chance to enjoy something different, trying to get warm clothes or something warm to help you find some warmth in the cold. Although the prevalence of winter in urban environment is not so much perceived, the people in rural environment are perceived as much. Sometimes the onset of cold is not pleasant but painful.
কারন গ্রামীন পরিবেশে থাকা মানুষগুলো, আমাদের মতো করে শহরের জীবনের মতো এতোটা আরামপ্রিয় না। বরং তারা যে কোন পরিস্থিতিতে জীবনকে কার্যক্ষম রাখার চেষ্টা করেন এবং প্রতিনিয়ত পরিশ্রম করে যান। যদিও আমরা যারা শহরে বসবাস করি, একটু সুযোগ পেলেই ভিন্নভাবে আলসেমির মাধ্যমে জীবনকে উপভোগ করার প্রচেষ্টা চালাই।
Because people in rural areas are not as comfortable as we are in urban life. Rather they try to keep life functional in any situation and constantly work hard. However, those of us who live in the city try to enjoy life differently through laziness whenever we get a chance.
যাইহোক, আজকের লেখায় আমি স্থানীয় স্বাদের এবং জনপ্রিয় একটি খাবার উপস্থাপন করতে চাচ্ছি। শীতের সকালে কিংবা সন্ধ্যায় এর স্বাদ আপনাকে দারুণভাবে উষ্ণতা উপভোগ করার সুযোগ তৈরী করে দিবে। আর এর সাথে যদি এক কাপ গরম চা হয়, তবে স্বাদের পরিমান বেড়ে দ্বিগুন হয়ে যাবে। মনে হবে স্বাদের পূর্ণতা চলে এসেছে। এর পুরান ঢাকার জনপ্রিয় এই খাবারটির নাম হলো বাকরখানি।
However, in today’s post I want to present a dish of local flavor and popularity. The taste of winter mornings or evenings will give you the opportunity to enjoy the warmth wonderfully. And if you have a cup of hot tea with it, the amount of taste will be doubled. It seems that the fullness of taste has come. The name of this popular dish of old Dhaka is Bakarkhani.
সত্যি বলছি, যখন ঢাকার বাহিরে থাকতাম। বিশেষ করে শৈশবে বাকরখানির স্বাদ গ্রহন করার সুযোগ হয়েছিলো। কারন আমার মামা তখন পুরান ঢাকায় চাকুরী করতেন। যার সুবাদে তিনি আমাদের বাড়ীতে আসার সময় প্রায় বাকরখানি নিয়ে আসতেন। কিন্তু তখন এর মহত্ব বুঝতাম না। তবে মাঝে মাঝে খেতাম কিন্তু এর ব্যাপারে ততো বেশী আগ্রহ ছিলো না। শুধুমাত্র স্বাদটা ভালো লাগতো তাই খেতাম।
Honestly, when I was living outside Dhaka. Especially in my childhood, I had the opportunity to taste Bakarkhani. Because my uncle was working in old Dhaka then. Due to which he used to bring Bakarkhani when he came to our house. But then I did not understand the importance of it. However, I used to eat sometimes but I was not interested in it. I just liked the taste so I ate.
তবে শহরে বসবাস করার সুবাধে আমি এটি বানানোর প্রক্রিয়াটি খুব কাছ থেকে দেখার সুযোগ পেয়েছি। এটি বানানো মোটেও সহজসাধ্য বিষয় নিয়ে, বিশেষ করে কয়লার তাপে এটি তৈরী করতে হয়। তাছাড়া বানানোর পর এটি গরম খাওয়ার স্বাদ সত্যি আপনাকে ভিন্ন ধরনের অনুভূতি তৈরী করে দিবে। আপনি এর স্বাদ এবং এই খাবারটির কথা দীর্ঘ দিন মনে রাখতে বাধ্য হবেন। আর এই কারনেই পুরান ঢাকার অধিকাংশ মানুষ এটি খেতে পছন্দ করেন। এর দাম এক কেজি ১০০ টাকা মাত্র। পুরান ঢাকার যে কোন এলাকায় এটি পাবেন।
However, living in the city, I got a chance to see the process of making it up close. It is easy to make, especially in the heat of coal. Moreover, the taste of hot food after cooking will really make you feel different. You will be forced to remember its taste and this food for a long time. And this is why most of the people in old Dhaka like to eat it. It costs only 100 taka per kg. You can find it in any area of old Dhaka.
