Hi all, first time making this after seeing it in a menu once. It may not be the correct recipe but damn was it tasty for a very quick side dish! So I decided to share (my take anyway):
Boil 1 pack sugar snap peas for 2 minutes in a pan
Heat a frying pan/wok on high and leave dry (no oil)
Drain peas and add to hot frying pan, allow to charr slightly and keep tossing for 2 minutes
Remove from heat and add just a splash of sesame oil and toss again to coat
Add a teaspoon of Cosher salt (or sea salt), chilli flakes to tastes (or freshly chopped chilli) and a teaspoon of crushed garlic
Return to the heat, toss again to coat. Add some sesame seeds to your preferred amount and serve!
After making this side dish I will definitely be adding it to accompany some of my future dishes 😋
I've seen many variations of this after making it involving Mirin, soy sauce and sake but that's the joy of cooking, just make it your own! ✌️
