10 to 14 pound Turkey
1/4 kosher salt
Clean and salt your Turkey generously let sit in refrigerator uncovered fir atleast 10 hours
Herb Infused olive oil
Oregano
Thyme
Sage
1/2 cup olive oil
Heat olive oil add herbs and sauté only for a few minutes
Just enough to infuse the oil
Aromatics for Stuffing the cavity
1 Apple
1 Orange
1 Onion
1 Shallot
1 Whole head of garlic
Olive oil infused herbs
Vegetables for bottom of roasting pan
3 carrots cut in three or 4 pieces
2 stalks of celery cut in three to four pieces
1 onion cut into thick circles
1 shallot quartered
1 bell pepper cleaned and quartered
Seasoned Mayonnaise
4 cups mayonnaise
2 tablespoons sweet paprika
1 tablespoon onion powder
1 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons infused olive oil
1/4 teaspoons nutmeg
Mix all ingredients and set aside until needed
My Turkey is 11 pounds and will Bake at 350 degrees
For 3 hours.
Fill the cavity
Cover with the mayonnaise lay on roasting pan and put the veggies in the pan.
Cover the first two hours
Keep basting or brushing with juices from the Turkey
