Made my wife Reuben sandwich for dinner tonight (with a green salad and homefried potatoes). Here is rye bread recipe for the new people on this site and for anyone who might want to make it. German Rye Bread (English translation) 4.5 cups unbleached flour; 2 cups rye flour; 2 tablespoons instant dry yeast; 2 tablespoons caraway seeds; 1 1/2 tablespoon salt; 1/3 cup molasses; 3 cups lukewarm water. Mix all dry ingredients together and stir with a whisk to blend. Next add molasses and water. Mix all together with a wooden spoon (turn wooden spoon over and use the stick part instead of the spoon part to stir. Works great) Stir till it is mixed but it will be sticky. Cover with plastic wrap. Cover with tea towel. Set aside to rise 2 to 3 hours. You can also mix at night and bake it in the morning.30 minutes before baking turn oven to 450 degrees Fahrenheit and put dutch oven in oven. Put parchment paper on working surface and dust with some flour. Turn dough onto parchment paper covered with some flour and turn over on side a few times to form round or oval shape. Cover with tea towel while oven heats. Takes about 30 minutes for oven to reach 450 degrees Fahrenheit. Take lid off dutch oven and put bread including parchment paper in Dutch Oven and put lid on. Bake 30 minutes with lid, remove lid and continue to bake 20 more minutes (caution very hot Dutch Oven). After bread is baked remove Dutch Oven from oven and set on heat proof surface. Remove bread and put on cooling rack and let cool 1 hour before slicing. The taste improves over several hours.
