Potato Salad Recipe

My Oma always made a big batch when she made the potato salad, (4 kids plus parents)

  • 5 lb sack of potatoes, peeled and cooked
  • 1 full pkge bacon, cooked crispy, and all fat set aside in pan. Crushed up bacon strips and set aside some for garnish.
  • Apple Cider Vinegar
  • 1 Lge Onion, diced
  • 1 Lge Green Pepper, diced
  • 2-3 ribs Celery, chopped (include leaves)
  • 3-5 boiled eggs, chopped - 1 egg sliced for garnish on top
  • black pepper (a good amount)
  • Salt if needed to taste

In a very large bowl add all ingredients and toss together. Heat bacon fat in skillet and add Apple Cider Vinegar, bring to a roaring boil and pour over potato salad and mix well. Place egg slices and some saved crushed bacon for garnish on top. Serve immediately.

For leftovers, heat for 1 minute on plate in microwave.
