Chocolate Caramel Cake

3 8 inch cake baking pans buttered and a parchment.Preheat oven to 350

2 cups all purpose flour
3/4 cup unsweetened baking coca powder
1 1/4 cups granulated sugar
1/2 cup lite brown sugar
1 teaspoon baking powder
2 teaspoons baking soda
1/2 teaspoon sea salt
1/2 cup vegetable oil
3 eggs
1 cup sour cream
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/2 teaspoon chili powder
4 teaspoons instant coffee
1 cup boiling hot water

I’m a separate bowl sift all dry ingredients (except lite brown sugar and coffee)

In a mixing bowl beat eggs, lite brown sugar, oil, and sour cream.
Add dry ingredients mix well.
Add coffee to boiling water and slowly add into the cake batter.
The batter will be very thin evenly spread into cake pans
Bake for 20 to 25 minutes or until an inserted tooth pick comes out clean.

Simple Syrup

1/2 cup granulated sugar
Two tablespoons bourbon or rum
1/2 cup water
Heat all ingredients until sugar is dissolved. For about 3 minutes
Let cool until needed.

Caramel

One can sweetened condensed milk
One big pot of water
Place the can only the water make sure it is completely covered.
Boil for 3 hours, when water is starting to evaporate add more. Do not boil more than three hours.
Cool completely before opening the can. You can cool in cold water and ice before opening the can.
When opened take all of the caramel out mix and set aside.

Whipped Chocolate Ganache

1 1/2 cups heavy whipping cream
12 ounces semisweet chocolate chips
4 tablespoons butter
2 tablespoons rum or bourbon

In a deep bowl place all of the chocolate chips.
Heat to a boil heavy cream, butter and bourbon or rum.
Do not over boil, pour over chocolate let sit 4 minutes then start to mix until smooth.
Let cool at room temperature for an hour.
Then whip into a frosting. Chill until needed.

Ganache Glaze
6 ounces chocolate chips
3 tablespoons butter
3/4 cup heavy whipping cream

Cookie coating
Chocolate graham cookie crumble
One tablespoon unsweetened cocoa powder
Mix well.

Heat cream and butter pour over chips, let sit fir 3 minutes mix until ver smooth. Leave at room temp. Needs to be made right before glazing otherwise will be too thick.

Steps
Cake layer, simple syrup, drizzle of caramel and a frosting.
Repeat for second layer. Cover with third layer of cake and pour ganache drizzle.
