Hello Blurt!!
My LOVE for Indian Food started back in 2011 when I came to New Zealand. There is a massive cultural mixture here, so theres food from everywhere. The first curries that I ever had where in Queenstown if I recall correctly and man... it was love at first bite.
Unluckily Indian Food is hard to find in Uruguay, almost non existent. So... whenever I crave such dishes while being at home I have to cook them myself.
Last time I was at home (last year) I cooked this for my mum and a friend: Chicken Korma. Gotta love the aroma and the deep flavors.... YUM!!

RECIPE:
Ingredients: 2 large red peppers (capsicum), 3 large onions (white or red, both are fine), 2 large zucchinis, 5 cloves of garlic, 300 ml of cream, 200 ml of plain yogurt, 3 tbsp of tomato puree, 2 chicken breasts and of course... spices (curry, thai curry, tumeric, garam masala, cinnamon, black pepper, and cardamomo pods)
You can do it with whatever veggies you have, but please always use onions and garlic.
I like to chop the veggies quite chunky, but that is a personal taste, feel free to improvise.
Chop the onions and peppers and cook them in high heat with a dash of olive oil (could be butter too).
After 5-10 minutes, add the zucchinis chopped chunky as well. Cook all together for another 5-10 minutes. Add the chopped garlic and cook a couple of minutes. You want your veggies to look well cooked. Then add the tomato puree, and stir for a minute. Then add the spices (to taste) and cook them for a couple minutes.
Add the cream and yogurt and let it simmer for 5 minutes.
On a different pan, cook the diced chicken breast in high heat until golden. Then add the chicken to the curry mixture, let everything simmer for 10 minutes at low heat.
DONE! the curry is good to go.
Cook some basmati rice and call your friends to share a hearty meal!
