This is my mom’s recipe and my once of favorite dish 😋 it’s so tasty, savory taste spicy and sour and very good serve with rice vermicelli and glass noodle , you may add daikon or mustard green with it if you like .
Ingredients ✨
1.5kg Pork trotter + lean meat ( you can only use pork trotter )
35gram tamarind slices
10pcs dried chili (my version is mild spicy you may add more if you like more spicy)
1 bulb garlic
Seasoning ✨
3 tablespoons oyster sauce
1 tablespoon light soy sauce
1 teaspoon taucu
20gram rock sugar
1 teaspoon dark caramel soy sauce
Water ( until same level with pork trotter )
Method✨
Blanch the meat with spring onion, ginger slices and 1 tablespoon cooking wine for 5 minutes then rinse and drain.
Heat up the wok with cooking oil stir fry garlic about a minute following with tauce stir fry until fragrant add in the meat mix them well , add in all the seasoning add in water until same level with the meat cover up the lid with over high heat after boiling turn the heat to medium low braised for 1 hour . After 30 minutes give it a stir , after 1 hour and it’s done and the meat are really tender , you can use a chopstick to stick in easy mean it’s already done .
Tips✨ if you wish the pork trotter texture little bouncy you may reduce the cooking time check around 45minutes .
