Bitter melon may not be the most appealing ingredient to some Filipinos. It is known for its characteristic strong and bitter flavor, which may enthrall some people. But when you cook it correctly, it makes a wonderful and unique addition to a dish. Especially delicious at Ginisang Ampalaya with Shrimp because the sweetness of the seafood contrasts wonderfully with the sweet and bitter taste of the greens.
