Didi love eggs 🍳! He enjoyed sunny upside, soft boiled egg, fried egg & steamed egg.
Here, sharing one of his favourite - Pumpkin 🎃 Steamed Egg Recipe (Since we have a few leftover pumpkin from Halloween 👻) .
Ingredients:
🎃 1 (about 400g) pumpkin
🍤 3-4 prawns
🥚 2 eggs
💧 60-100ml of water
Seasonings:
🧂 1 tsp mirin, 1 tsp light soy sauce
🧂 1/2 tsp rice wine
🧂 1 tsp Lilo scallop powder
Method:
- Shell & devein prawns. Mix with rice wine & scallop powder, marinate for 5-10mins
- Rinse & scrub pumpkin skin with a brush. Cut 1/3 off the top & remove seeds with spoon
- Steam pumpkin until half cooked (15mins). Let it cool.
- Put eggs, mirin & light soy sauce in a bowl & beat well. Add water & mix well.
- Placed shelled prawns into pumpkin. Then strain egg mixture into it.
- Steam for another 20mins. And it’s ready to serve.
The sweetness of pumpkin & egg flavour make this dish so suitable for young toddler.
