Baek Kimch ( white kimchi or non-spicy kimchi)
Kimchi is korean national dish eating everyday and always on the tables as a side dish. So it is part of Korean culture and life.
Basically, kimchi is any type of fermented vegetables. Fermentation is different than pickling in the sense that there’s no vinegar involved. During the fermentation lactic acid starts forming in Kimchi and that lactic acid is lactobacillus which is really really good for our guts. That’s why Kimchi is incredibly super healthy food.
Unlike regular Kimchi ( red kimchi)usually made Korean chili flakes, Baek Kimchi is made without Gochugaru( korean chili flakes) so it is kids-friendly, for the elderly or the foreigners, to whom regular kimchi( spicy kimch) might have issues.
But, of course, regular spicy kimchi is much more popular to many people. I also added chilies chopped into Baek Kimchi.- i need a bit spicy.
