About What It Was Like To Ruin a Beef Tripe Recipe

I live in a distant country, all countries are far away in the end. In Romania, Eastern Europe, in the south, with some Balkan influences.
The Balkan cuisine is amazing, heavy and aromatic dishes but extremely tasty, especially the Turkish, Bulgarian, Greek ones ... In Romania we have influences from the Balkans, one of them being Beef Tripe.

An extremely popular dish, especially for travelers, truckers, who invariably eat this dish in the thousands of pubs on the roadsides. I tried to prepare it at home and look what came out!

The main ingredient can be bought from the supermarket, cleaned (otherwise this operation is quite difficult to do).

Cooking is not difficult in principle, put this meat to boil, it must boil a lot until it becomes tender and then put some simple ingredients. But good food does not result. The recipe needs to be improved. So proceed as follows:

At the beginning, I put some meat and veal bones in a pot, to boil.

After boiling for about an hour, I put Beef tripe to boil, also let it boil for at least another hour.

When the meat is cooked and tender, add the vegetables: onion, carrot, bell pepper and celery.

Here I destroyed my recipe, I forgot that the vegetables must be boiled whole, not cut. I even worked to cut them small, like a fool!

Later I understood the mistake, I had to remove all the pieces of vegetables from the pot. It wasn't exactly easy. After this not very pleasant operation, we continued with the finishing part of the meal, that is, to bring different specific tastes and smells.

First of all garlic, which will be mixed with sour cream and eggs.

This mixture of garlic, sour cream and egg plus finely chopped parsley is added to the pot. Boil with the meat for about three minutes and the food is ready.
