Special Meal After the Two Tropical Storms

Tough days just passed, Tropical Storm Rolly and Siony were both strong types of storms and affected Metro Manila where I am. It were days of no sunshine and just rain, winds and floods. It was terrifying like end of days. We hibernated like bears, there was nothing to do, nowhere to go, coronavirus is still here and the weather was also threatening our lives, homes and our properties. It's a tough time to be alive these days, tough times.

I cannot describe enough how stressful it has been lately, but we tap on our resilience and man up to still face tomorrow and the next days. Like always, storms do pass and we do move on. This week is my week of unwinding and debriefing myself about you know, focusing on positives and still love the life we live. We focus on mental health and what's the best way to do it is to satiate ourselves with comfort and the things we love and enjoy.

Food is one good motivation so I always make sure we have a good menu for the day and I cook my favorite dishes and comfort foods that my family love.

I know I have posted a lot about Kare-kare or Ox Tail Peanut Stew, a Filipino traditional dish but this is something I cannot get enough of and I am proud of it. My family love it as well that's why it's our specialty. I would love to have friends over to our house and brag about it but I cannot even do that now. Anyway, I still make efforts to have it plated perfectly and take pictures to show it to the world because that's the only thing we can do now. It is sad, but I am hopeful, this too shall pass and we will all be back to our old ways enjoying the company of friends and we will never take it for granted.

These times are hard, please prioritize your well-being and reach out to family and friends. Be sure to watch each other's back and just generally be kind to everyone so we will make it less difficult for everybody.
