I think I have perfected my OWN version of Kare-Kare or Beef Peanut Stew. It is a Filipino beef dish that originated in Pampanga, Central Luzon where my mother is from. I loved my late mom's version of it but sadly I cannot have a taste of it anymore because she is gone. However, she was the one who taught me, so I decided to make my version. I love this dish so much I make this so often like once a week. I also mastered plating it with all the veggies that I like. This is paired with bagoong or fermented salted baby shrimps. I don't have it in the picture but I'd definitely serve it with that to the fam. This is our dinner this Monday night. A tropical storm is wrecking havoc outside. We are trying to calm ourselves with good food like this. Ciao!
