Filipino Food: Palitaw

Palitaw, the word has a root word litaw which means float. It describes the way this delicacy is cooked. This is made of ground sticky/glutinous rice mixed into a dough and rolled into round plates like pancakes. They are dropped into a boiling water until they float and have that right consistency which is so chewy. We then roll it in white sugar, sesame seeds and grated coconut.

If you want the palitaw to be colorful, you may add food color to the sticky rice dough and do the same process. You will have colorful palitaw which will look so festive, ideal for birthdays and fiesta celebrations. However, I like it plain white. This is so chewy and addicting, I can eat a big plate of this.
