Serves 4-5

  1. Ingredients:
1 medium green (unripe) papaya, peel and coarsely grate or shred, soak in ice water for 12-15 minutes until they are firmer, drain
5-6 long beans, cut into 2-inch pieces
    1/2 cup carrots, sub shredded
1 cup grape tomato, cut into wedges
    2 tbsp dried shrimp, rinsed
    1/2 cup boiled peeled prawn
    3 small cloves garlic, peeled
4-5 whole bird’s eye chillies, depending on degree of bravery
    Pinch of coarse salt
2 tbsp fish sauce, to taste
    2-3 tbsp shaved palm sugar
    2 tbsp fresh lime juice

  2. Instruction:
Crush garlic, chillies, salt with papaya then add long beans and tomatoes and pound a few times to release juices.
Add palm sugar and pound until sugar starts to dissolve.
Add dried shrimp and peanuts and pound to break the peanuts up slightly.
Add boiled peeled shrimp, fish sauce and lime juice. Use a large spoon, alternate scooping and turning the ingredients and pounding them with the pestle so that everything gets mixed together.
    Taste for seasoning.
Sprinkle with peanuts and serve immediately with sticky rice and BBQ chicken!
