I'd like to make kimchi for the first time

I have these fermentation lids for mason jars that let the carbon dioxide gas out so you don't have to burp them.

Are these acceptable for kimchi? Do you think they'll let the smell come out, too so that I should store somewhere cold outside of the kitchen or fridge?
