Purple Sweet Potato Glutinous Rice Balls with Brown Sugar

STEP BY STEP COOKING INSTRUCTION
WITH FOOD PHOTOGRAPHY


The village I am in is filled with sweet potatoes. There are so many foods that can be explored from these ingredients.

This time I was lucky enough to find purple sweet potatoes. Even though in my area I am familiar with sweet potatoes, the purple kind is quite difficult to find.

The beautiful color makes a great dessert. I made Purple Sweet Potato Glutinous Rice Balls with Brown Sugar. Usually, we serve it for breakfast as well as dessert.

Ingredients

  • 400 grams of Sweet Potatoes
  • 300 grams of glutinous rice flour
  • 180 grams of water, can be more or less depending on your dough. So please add water a little at a time when kneading the dough.
  • 1 teaspoon of salt
  • 1 teaspoon of vanilla
  • 100 grams of chopped brown sugar for sweet potato balls filling.
  • 200 grams of grated coconut, mixed with one teaspoon of salt.



Cooking Instructions

- Step 1

Steam the sweet potatoes together with the grated coconut to save time. Here I steam using a rice cooker.




- Step 2

Remove the sweet potatoes then transfer them to another container for the process of kneading the dough.

While it's hot, mash sweet potatoes. Don't let the sweet potatoes cool down. So we have to knead the ingredients as soon as possible.




- Step 3

After the sweet potatoes are soft, add the glutinous rice flour. Mix well.

To make a good dough, slowly add water and then knead. Do it until the sweet potatoes and flour become a formable dough.

Shape the dough into a round shape.

Then, flatten it to fill with chopped brown sugar. Then, carefully round again by hand. Do a circular motion with both palms to create a perfectly round shape.





- Step 6

Bring the water to a boil. Then add the sweet potato balls to boiling water. Cook until the balls float on the surface then remove.




- Step 7

Roll the sweet potato balls into grated coconut which has been steamed.

Serve.




This dessert has a chewy texture because it uses glutinous rice flour. For the taste, we will enjoy the savory taste of coconut combined with the sweetness of brown sugar that melts in the sweet potato balls.

The brown sugar is like a sweet, delightful bomb exploding in your mouth when you bite into the sweet potato balls.
