Good day blurtians, today we cook pinakbet. Pinakbet also called pakbet is an indigenous Filipino dish from the northern regions of the Philippines. This dish is also very rich in vitamins.
Pinakbet is made from mixed vegetables, vegetables used include:
- kalabasa
- eggplant
- tomato
- okra
- ampalaya
- sitaw
- bagoong
- pork
Root crops and some beans like camote, patani, kadios are also optionally added.
It is usually spiced with:
- garlic
- onions
- salt
- papper
You can also chicharon if you like.
Lets start cooking:
Sauté garlic, onion, tomato, pork and bagoong in oil. Pour water and simmer for 10 minutes.
Add kalabasa, okra and sitaw in 2-minute intervals. Add ampalaya and eggplant and simmer for 5 minutes and season with salt and pepper.
