RECIPE :
A. Heat 3tbsp of oil. Add 1tbsp garlic (minced coarsely) + 1tbsp ginger(minced coarsely) + 2 thumbsize crushed lemon grass + 8 curry leaves. Fry till light brown and fragrant.
B. Add 1tbsp chilli paste(extra 1tbsp if u like spicy). Fry for 1min and add 2cup of water (if u like more gravy add half cup more).
C. Add in 200ml coconut milk (can or packet) into pot + 1tsp salt + a pinch of pepper. Once boiling, add in mussels (20pieces) + 2 fried brinjal (prepared earlier - cut thick slices and deep fried lightly and put aside) for about 2mins on medium heat.
D. Add 1tsp salt + pinch pepper + 200ml coconut milk. Mix well, once boiling, lower heat to lowest. Cover pot or wok n simmer for about 3- 5mins. Ensure brinjal is not too soft. Ready to serve. Enjoy 😋😋
