Lately I have been having cravings for junks and flour products, yet I couldn't make out time to get it done or go shopping for it. I had a visit from friends yesterday and while I was seeing them off I saw a confectionery store so I picked up everything I could need to make a Scottish Shortbread cookies. This is a little different from the usual cookies cos it looks more like a shortbread and taste different, well the taste is attributed to the proportion used.
Ingredients:
All purpose flour
Sugar (I improvised with icing sugar due to the smoothness)
Milk
A pinch of baking powder
Vanilla essence
Preparation:
Cream butter and sugar till fluffy.
Mix all dry ingredients (vanilla essence, flour, and a pinch of baking powder)
Incorporate the mixed dry ingredients to the butter gradually till a nice and soft dough is formed
Roll into a thick sheet on the cutting board and cut into desired shapes. Use a spatula to smoothen the edges
Make incisions with fork and arrange on a greased pan
Bake in a preheated oven at 180°C for 15 minutes or 160°C for 40 minutes
Once it's golden brown, allow to cool and store in airtight containers
