Space travel is a costly endeavor and every penny counts.
The food needs to be dehydrated, compacted, and be stable for a long period of time. We can't have food rotting in space, this is no good. I've read in the past there are hundreds of different dishes that are available.
Whether or not they taste like what is printed on the package is a different story.
