Pork Belly Roast Bed

I had planned to make a lasagne, but Jude contested whilst we were out shopping and suggested a pork belly roast instead.... (got to love my child! haha) He has ALWAYS loved pork belly, yet he does not eat the crackling... crazy I tell ya! haha!

I love prepping the bed for roasts! You can get really creative with how you aromatically flavour the meat and pork is particularly fun to experiment with because there is essentially NO other seasoning other than the olive oil and salt on the rind, so you truly get to "experience and appreciate" the flavours of the bed within the meat.

Today I created a bed of:

Lemon Thyme, Mint, Rosemary, Celery Sticks, Apple Slices, Onion, Garlic and ground black pepper.

It almost seems a sin to cook it because it looks so bloody pretty! haha :) So once the bed is done, you literally season the scored pork rind with a little olive oil and salt and then lie it on the bed which you have created.

Please DO excuse the seriously crappy scoring (or cutting rather) of the pork rind, compliments of the clearly inexperienced butcher at the local supermarket. lol - but I have given up fighting with them over it and today they had no "un-scored" belly's because I would normally score it myself with a blade.... knives just don't cut it with pork rind... literally! haha!!

So that has now been popped into the oven for the next 4 hours and I have decided to keep the sides pretty simple.... garlic and parsley sweet potato mash, steamed baby gems and yellow patty pans - oh and GRAVY!!!! We cannot forget the gravy!!!
