Cooking Pancit Bihon With Chayote and Sardines

Hello everyone! Welcome to my new food blog. I have been craving pancit bihon since last day because it's been two weeks or more that I haven't eaten it so for today's lunch I decided to cook to satisfy my cravings. Pancit bihon is also my boys favorite especially the youngest boy. Before my boys came home from school I already started chopping the chayote. I also prepared the wok that I would be using and so too with the other ingredients.

Ingredients

oil, bihon, sardines, seasoning granules, soy sauce

In the photo I didn't included the spices to be used because I was using garlic only. There are cases wherein we ran out of other spices at home and this is one of those. I didn't go to the market this week so only garlic is left in the kitchen so that's what I used only. After preparing all the needed ingredients, I soak the pancit bihon in a container with 3/4 water. I always did this whenever I'm cooking bihon to soften it so that it won't take time in cooking. When it's soften, I drain the water out of it and started cooking.

Put oil in the wok and let it heat. When the oil is hot, sauteed the garlic until it turn brown.

Next put the chopped chayote and mix it. When it's properly mix add the canned sardines and mix it well. When these two ingredients are mix, add water to it. I only add small amount of water enough to cook the chayote before adding the bihon.

After adding water, I put a little amount to soy sauce. I used soy sauce instead of salt. Then I also seasoned it with the Namnam seasoning granules then mix it so that the seasonings are mix well with the other ingredients. Then cover the wok and let the chayote cooked for two minutes since the slices of it is thin.

After two minutes, I checked the chayote and it's already cook so I added the bihon and mix it well. I continued mixing it for about a minute making sure that the sauce was mix well with the bihon. After I covered it for another minute. It is to cook the bihon. Since it's already soften, a minute is enough to cook it.

Here's the pancit bihon with chayote and sardines. The sardines isn't very clear because while mixing it get into smaller pieces. I love pairing this pancit bihon with rice and dried fish. Tasting the saltiness of the dried fish makes me have more appetite to eat. Is it weird for you? I'm sure it's a weird food combo for others but in my part it was one of the best combo. It's maybe because I grew up eating dried fish paired with different foods like when we're having vegetable soup, dried fish is really a best combination of it. It makes me very full.

I love to take something ordinary and make it really special.
