Today again I have brought you fish details. Today I will tell you about some fishes. I have described several fishes before you. The notable fish among those fish was the Pabda fish. Today I am trying to present to you some remarkable fishes. Among these months, one of the notable months is Taki fish. Some call it Taki fish and some call it Chang fish. These fish are usually found in canals. At one time these fishes were seen in abundance but due to the evolution of time they are now very rare. I remember when I was very young these fish were caught in large numbers. But these fishes are now on the verge of extinction due to the use of more chemicals. Still, these fish are occasionally found in ponds. How do these fish slowly build up in a pond due to not draining the water for a long time. These fishes were once seen very often but now they are not seen so much due to which the price of these fishes is very high now. It is a surprising thing that at one time every person had this fish in their house but now why you can find 100 houses or you may not find this fish. Now at present its monthly price is much higher at Tk 400 per kg. In fact, things that are less are not valued but more expensive. He fishes are sometimes seen in fish lights now. And another thing is that these fishes are water fishes, if there is no water these fishes will not exist and at present monsoon is very less. But these fishes have disappeared due to less habitat. But if we have to talk about extinction, I have said it before and I am saying again that the biggest reason behind the extinction of these fishes is the use of poisons and chemical fertilizers. These fish species have been exterminated by excessive use of poisons and chemical fertilizers. And this is why these fishes are now less available. There are many benefits of this month, the most notable of which is that people's blood increases by eating these fish. And these fish can be eaten in quite different ways. Many of you may know and many of you may not know that there is a cut in the middle of the big fish that tastes good. Also there is another quality of this month that if you cook the small fish with litchi, it tastes very good. In a word, this fish is very useful and tasty fish. These fishes cannot be farmed in ponds because all the fishes do not stay in one place at any time and migrate to different localities. Fishes are in great demand of people because all the fishes are not easily available so the demand is high and the budget price is high.
আজকে আবারো আমি আপনাদের মাঝে মাছের বিবরণ নিয়ে এসেছি। আজকে আমি কয়েকটি মাছ সম্পর্কে আপনাদের মাঝে তুলে ধরবো। বেশ কয়েকটি মাছের সম্পর্কে আমি আপনাদের সামনে বর্ণনা করেছিলাম। সেইসব মাছের মধ্যে উল্লেখযোগ্য মাছ ছিল সে পাবদা মাছ। আজকে আমি বেশ কিছু উল্লেখযোগ্য মাছ আপনাদের মাঝে তুলে ধরার চেষ্টা করছি। এসব মাসের মধ্যে উল্লেখযোগ্য মাসে একটি সেটা হল হচ্ছে টাকি মাছ। কেউ এটাকে টাকি মাছ বলে কেউ আবার চ্যাং মাছ। এসব মাছগুলো সাধারণত খালে পেলে বেশি পাওয়া যায়। একটা সময় এসব মাছগুলো প্রচুর পরিমাণে দেখা যেত কিন্তু সময়ের বিবর্তনের ফলে গুলো এখন খুব কম দেখা যায়। আমার মনে আছে তখন আমি অনেক ছোট সেই সময় এসব মাছগুলো প্রচুর পরিমাণে খালি ফেলে ধরা হতো। কিন্তু বর্তমান সময়ে অধিক পরিমাণ রাসায়নিক ব্যবহার করার ফলে এসব মাছগুলো এখন বিলুপ্তের পথে। তারপরও এসব মাছগুলো মাঝেমধ্যে পাওয়া যায় পুকুরে। একটা পুকুরে অনেকদিন পানি নিষ্কাশন না করার ফলে আস্তে আস্তে এসব মাছগুলো সেখানে তৈরি হয় কিভাবে হয়। এইসব মাছগুলো একটার সময় অহরহ দেখা যেত কিন্তু এখন আর তেমন দেখা যায় না যার জন্য এসব মাছের দামও কিন্তু এখন অনেক বেশি। একটা অবাক করার বিষয় একটা সময় প্রত্যেকটা মানুষের বাড়ি বাড়িতে এই টাকে মাছ ছিল কিন্তু এখন আপনি ১০ বাড়ি কেন একশো বাড়ি খুঁজেও হয়তোবা এইটাকে মাছ পাবেন না। এখন বর্তমান সময়ে এর মাসের দাম অনেক বেশি প্রতি কেজি ৪০০ টাকা দরে বিক্রি করা হয়ে থাকে। আসলে যে জিনিসের কম থাকে সেই জিনিসের কদর থাকে না কিন্তু দাম থাকে বেশি। তাকে মাছগুলো মাঝেমধ্যে মাছের আলোতে এখন দেখা যায়। আর আর একটা বিষয় হলো এসব মাছ হল পানির মাছ শ্রোতারাং পানি না থাকলে তো এসব মাছগুলো হবে না আর বর্তমান সময়ে বর্ষা খুবই কম। বসা কম হওয়ার কারণেই কিন্তু এসব মাছগুলো বিলুপ্ত হয়ে গেছে। তবে বিলুপ্তের কথা যদি বলতেই হয় আমি আগেও বলেছি আবারও বলছি এসব মাছগুলো বিলুপ্ত হওয়ার পেছনে সবচেয়ে বড় কারণ হলো বিষ এবং রাসায়নিক সার প্রয়োগ করা। অতিমাত্রায় বিষ এবং রাসায়নিক সার প্রয়োগ করে এসব মাছের বংশ নিধন করা হয়েছে। আর এই কারণেই এই মাছগুলো এখন কম পাওয়া যায়। এই মাসের অনেক উপকার রয়েছে এর মধ্যে উল্লেখযোগ্য হল এই মাছগুলো খেলে মানুষের রক্ত বাড়ে। আর এই মাছগুলো বেশ ভিন্ন ভিন্ন ভাবে খাওয়া যেতে পারে। আপনার হয়তো অনেকেই জানেন আবার অনেকে না জানতেও পারেন বড় বড় যেসব টাকি মাছ থাকে এটাকি মাছের মাঝখানে যে কাটাটা থাকে এই কাঁটা ভর্তা করে খেতেও স্বাদ লাগে। এছাড়াও এই মাসের আর একটা গুণ রয়েছে সেটা হল ছোটটাকে মাছগুলো যদি আপনি লিচু করে রান্না করেন তাহলে খেতে অনেক সুস্বাদু লাগে। এক কথায় এই মাছ অনেক উপকার এবং সুস্বাদু একটি মাছ। এসব মাছগুলো পুকুরে চাষ করা যায় না কারণে সব মাছগুলো কোন সময় এক স্থানে এরা থাকে না ভিন্ন ভিন্ন স্থানীয়রা স্থানান্তরিত হয়। মাছগুলো মানুষের অনেক চাহিদা রয়েছে কারণে সব মাছগুলো তো সহজে পাওয়া যায় না তাই চাহিদাও বেশি এবং বাজেটের দাম বেশি।

It is natural that the value of good things will be a little, but this cotton fish is the proof. Cotton fishes are farmed in ponds, but cotton fishes are more flavorful than pond fishes. The bones of the fish in the pond are a little less because less fertilizer is applied here. You know if any fish can be prepared using chemical fertilizers then the taste of this month will be a little less. And in the bill, that is, the fish that grow naturally, these fish are seven extraordinary. In our country, these fishes are now very few in the village ghats or they are very rare. In fact, it is very difficult to catch them. We all believe that things that grow naturally are better in every way. Rui fish has a cross. Rui fish has two, one only Rui fish and a cross, but the normal Rui fish is more delicious than the cross. I would suggest you if you want to eat roe fish then definitely eat big roe fish because the taste of big roe fish is much more than small roe fish. However, bigger fishes are not within the purchasing power of everyone because if you want to make a mascara, it will cost more than two thousand rupees. So I would say you can eat it as much as you have purchasing power.
আজকে আমি আপনাদের মাঝে আরেকটি খুব পরিচিত একটি মাছ নিয়ে আলোচনা করব এই মাছের নাম হলো রুই মাছ। রুই মাছ সবাই বলে মাছের রাজা রুই মাছ আসলে রুই মাছগুলো যদি অনেক বড় করে খাওয়া হয় তাহলে অনেক সুস্বাদু লাগে। ভালো লাগলো একটা কথা রয়েছে সবার কাছে ভালো লাগে না যেমন আমার কাছে।আমি বরাবরই মাছের প্রতি খুব একটা আসক্ত না অর্থাৎ মাছ আমার খুব একটা ভালো লাগে না। তবে যাই হোক ভালোলাগা না লাগা সেটা বড় কথা নয় আজকে আমি রুই মাছ সম্পর্কে আপনাদের সামনে কিছু তথ্য তুলে ধরার চেষ্টা করব। রুই মাছ রুই মাছগুলো ছোট ছোট মাছগুলো পুকুরে দেয়া হয় এবং দেড় বছর চাষ করার পর এই মাছগুলো দুই কেজি থেকে তিন কেজি হয়। অবশ্য এই রুই মাছগুলো এর থেকে অনেক বড় হয়ে থাকে আসলে এই মাছগুলো যত বড় হয় তত বেশি স্বাদ লাগে। অন্যান্য মাছের থেকে রুই মাছের দাম অনেক বেশি। এসব মাছগুলো বাজারে ৪০০ টাকা ৩০০ টাকা করে বিক্রি করা হয়ে থাকে। তবে দামটা কিন্তু অনেক সময় নির্ভর করে মাছের ওজনের উপরে যদি মাছের ওজন বেশি হয় তাহলে দামও বেশি। আর এই মাসের চাহিদা সম্পর্কে আপনাদের মাঝে আর কি বলব এই মাসের এত চাহিদা যদি বড় বড় মাছ আসে তাহলে এই মাছ ছাড়া অন্য কোন মাছ কেউ ক্রয় করতে চায় না। ভালো জিনিসের কদর একটু থাকবেই এটাই স্বাভাবিক তার প্রমাণ কিন্তু এই রুই মাছ। রুই মাছগুলো পুকুরে চাষ করা হয় তবে রুই মাছগুলো পুকুরে রুই মাছ যতটা সাধ তার থেকে বেশি স্বাদ বিলের রুই মাছ। পুকুরের মাছের সাধের হাড় একটু কম কেন কম এখানে প্রচুর পরিমাণে সার প্রয়োগ করা হয়। আপনারা জানেন রাসায়নিক সার ব্যবহার করে যদি কোন মাছ তৈরি করা যায় তাহলে এই মাসের স্বাদ একটু কম হবে। আর বিলে অর্থাৎ প্রাকৃতিক ভাবে যেসব মাছগুলো বড় হয়ে থাকে এসব মাছগুলো সাত অসাধারণ। আমাদের দেশে কিন্তু এসব মাছের এখন খুব একটা ভিলেজ ঘাটে বা এগুলো খুব কম পাওয়া যায় আসলে এগুলো ধরা তো অনেক কঠিন যদি আপনি মনে করেন যে নদীতে বা বিলের মাছগুলো ধরবেন তাহলে এটা আসলেই কঠিন। আমরা সবাই বিশ্বাস করি প্রাকৃতিকভাবে যেসব জিনিসগুলো বড় হয়ে ওঠে সেসব জিনিসগুলো সব দিক থেকে ভালো হয়। রুই মাছের কিন্তু ক্রস রয়েছে রুই মাছের দুইটা একটা শুধু রুই মাছ একটা ক্রস তবে ক্রসের থেকেও স্বাভাবিক রুই মাছ এই মাছগুলো খেতে বেশি সুস্বাদু। আমি আপনাদেরকে সাজেস্ট করব যদি আপনারা রুই মাছ খেতে ইচ্ছা পোষণ করেন তাহলে অবশ্যই বড় রুই মাছ খাবেন কারণ ছোট রুই মাছের থেকে বড় ওই মাছের স্বাদ অনেক অনেক গুণ বেশি। তবে বেশি বড় মাছগুলো সবার ক্রয় ক্ষমতার মধ্যে থাকে না কারণ একটা মাসকরায় করতে গেলে প্রায় দুই হাজার টাকারও বেশি পড়ে যায়। তাই আমি বলব যার যতটুকু ক্রয় ক্ষমতা আছে তার মধ্যে থেকে আপনারা এটি খেতে পারেন।

এই পর্বে আমি আরেকটি মাছের সাথে আপনাদের পরিচয় করবো। এই মাসটি অন্য যেকোনো মাছের থেকে একটু আলাদা। আলাদা কেন বললাম জানেন এই মাছটি এমন কিছু খাবার খায় যেগুলো সত্যি আপনাকে অবাক করবে। এই মাসে সাধারণ খাদ্য তালিকায় থাকে কলা গাছের পাতা বা কলার ভিতরে নরম অংশ থাকে হলো ছোট ছোট শামুক ঝিনুক। আরো এদের খাদ্য তালিকায় থাকেন নরম নরম ঘাসগুলো। এখন কথা আছে এসব জিনিস গুলো তারা কেন খায় এগুলো খেতে তারা খুব স্বাচ্ছন্দ বোধ করে আর একটা বিষয় হলো এই বিষয়টি আপনারা জানলে আপনার অবাক হবেন সে বিষয়টি কি আপনারা জানেন এই মাছের নাম হলো ব্লাড কাপ মাছ আর এই মাছের দাঁত দেখলে আপনার অবাক হয়ে যাবেন এই মাসের যে দাঁত তাতে আপনারা মানুষের দাঁতের কোন অংশে কম নেই। এই মাছগুলোর ওজন প্রায় ২০ থেকে ২৫ কেজি হতে পারে। এসব মাছগুলো পুকুরে চাষ করা হয় তবে পুকুরে ১০ কেজি এর উপরে আমি কখনো দেখি নাই কিন্তু যদি আপনি বাইরে কোন নদী বা অন্য কোথাও দেখেন তাহলে আপনি দেখবেন এসব মাছগুলো প্রায় ২০-২৫ কেজিরও বেশি ওজন হয়ে থাকে। আর এইসব মাছগুলোর দামও কিন্তু প্রচুর আপনি জানেন কিনা আপনারা জানেন কিনা আমি জানিনা পুকুরে যে ১০ কেজি ওজনের মাঝ থেকে এসব মাছগুলোর দাম প্রায় তা থেকে ৫ হাজার টাকা পড়ে। আর যেসব মাছগুলো রইলো আরো বড় হয় সেসব মাছগুলোর দাম আরো বেশি অর্থাৎ এটা সব পরিপূর্ণভাবে বলতে গেলে এক হাজার টাকায় সেজে বিক্রয় করা যায়। এসব মাছের লেজের দিকের এত বড় ক্ষমতা যদি আপনার গালে বা বুকের উপরে একটা লেজ দিয়ে বাকার পারে তাহলে আপনি হয়তো মৃত্যুর কোলে ঢলে পড়তে পারেন। আমি অনেক দেখেছি ছোট ছোট মাছের চাপড়ে অনেক জোনার কান কিংবা চোখ প্লেজে চোখ ফোলা এরকম অবস্থা আমি দেখেছি সুতরাং এসব মাছগুলো ধরার সময় অবশ্যই সতর্কও অবলম্বন করতে হবে। আজ সমাজ গুলো অনেক বড় হয় সেসব মাছগুলো একার পক্ষে ধরে রাখা সম্ভব নয়। কারণ পানির মধ্যে মাছ অধিক শক্তিশালী হয়ে থাকে। আর এজন্য এসব মাছগুলো কিন্তু অনেক শক্তিশালী এবং এদের দেহের গঠন যেমন মনেরা শক্তিশালী দিক থেকে অনেক কঠিন। বড় মাছগুলো খেতে সব সময় ভালো লাগে আর এগুলো ঠিক সাধেরই একটা মাছ। যাইহোক আমি আজকে যতটুকু পেরেছি তিনটা মাছের সম্পর্কে আপনাদের মাঝে বর্ণনা করার চেষ্টা করেছি। সামনের দিনে আমি আবারো কয়েকটি মাছের সম্পর্ক নিয়ে আপনাদের মাঝে হাজির হব সে থাকবেন সুস্থ থাকবেন আল্লাহ হাফেজ।
