Since this is not my local market, I try to buy shrimp after hearing from the local people here. Hilsa can be cooked in many ways. We also make hilsa recipe with mustard.

এখানে অনেক মানুষ ইলিশ কিনতে আসে। অনেক প্রকার ইলিশ এখানে পাওয়া যায়। আমরাও গিয়েছিলাম ইলিশ মাছ কিনতে। আমি ইলিশ কিনতে গেলে প্রথমে দেখি পদ্মার ইলিশ আছে কিনা। কোথায় কোন ইলিশ বিক্রি হচ্ছে সেটা ভালোভাবে ঘুরে দেখে তারপরে নেওয়ার ডিসিশন নেই। তারপরে দেখি কোনটার দাম কেমন। এই একই বাজারে স্থানীয় বা বাইরের বড় ছোট ধনী গরিব সবাই মাছ কিনতে আসে। কারো মধ্যে কোন ভেদাভেদ নাই। কারণ মানুষ খুব কম দামে এইখানে ইলিশ মাছ কিনতে পারে। যা সম্পূর্ণরূপে প্রাকৃতিক তাই এই ধরনের ইলিশ আমরা খাওয়ার চেষ্টা করি। নিম্ন আয়ের মানুষেরাও কম দামে ইলিশ মাছ কিনতে পারে।
ইলিশ মাছ বাংলাদেশের বহুল প্রচলিত এবং জনপ্রিয় একটি মাছ। আমরা যদিও এটিকে একটি মাছ বলে সম্বোধন করি কিন্তু এটি বাংলাদেশ জাতীয় মাছ। ইলিশের প্রজনন বাংলাদেশে হয় ব্যাপকভাবে। তারপরও বাংলাদেশ এর ব্যাপক জনপ্রিয়তা থাকায় মানুষের মধ্যে খাওয়ার চাহিদা দিন দিন বাড়ছে। যা এখন বাণিজ্যিকভাবে ব্যাপক হারে চাষ হচ্ছে এবং ইলিশ ধরে করে জেলেরা অনেক বৈদেশিক মুদ্রা অর্জন করছে। তারা ইলিশ রপ্তানি করে ভারতের পশ্চিমবঙ্গে। দেশের সরকারও এই খাতে দিন দিন বিনিয়োগ করে চলছে। কারণ এটি একটি অপার সম্ভাবনাময় খাত। এটি অনেক পুষ্টিগুণ সমৃদ্ধ। তাই দেশের মানুষের পুষ্টির চাহিদা মেটাতে এটি যথেষ্ট ভূমিকা পালন করে। আমিও আমার খাবারের তালিকায় ইলিশ মাছ রাখার চেষ্টা করি। ইলিশ মাছের সরষের সাথে রেসিপি অনেক ভালো লাগে। অনেক রেস্টুরেন্ট এগুলো কিনে নিয়ে যাই এবং তাদের বিলাস বহুল খাবারে ব্যবহার করে। ইলিশ অনেক প্রজাতির আছে কোনটা পদ্মা নদীর ইলিশ আবার কোনটা বরিশালে ইলিশ কোনটা আবার সাগরের ইলিশ। সাগরে ইলিশের তুলনায় পদ্মার ইলিশের স্বাদ অনেক ভালো। বাংলাদেশের মধ্যে ইলিশ চাষে অন্যতম বরিশাল। বরিশাল এবং চাঁদপুর থেকে ইলিশ নিয়ে আসা হয় এবং উক্ত ইলিশ মাছ আমরা কিনে থাকি।ইলিশ অধিক পুষ্টিগুণ সমৃদ্ধ। ইলিশ মাছের সাথে আরো অনেক প্রজাতির মাছ বাজারে আসে। বাজারে কিছু অসাধু ব্যবসায়ী সিন্ডিকেট করে ইলিশের দাম বৃদ্ধি করে। আপনারা যারা ইলিশ কিনবেন অবশ্যই সেটা দেখে কিনবেন। ইলিশ মাছ যেমন খেতে দারুন তেমন এর দাম টা একটু বেশি অন্যান্য মাছের তুলনায়। তাই বাজারদর বুঝে মাছ কেনা উচিত। যেহেতু এটা আমার স্থানীয় বাজার নয়, সেহেতু আমি এখানকার স্থানীয় লোকজনদের কাছ থেকে শুনে বুঝে তারপরে কেনার চেষ্টা করি চিংড়ি মাছ। ইলিশ অনেক ভাবে রান্না করা যায়। আমরাও সরষে ইলিশ রেসিপি তৈরি করি।
ইলিশের উপকারীতা ও অপকারিতা।
মস্তিষ্কের স্মৃতিশক্তি বৃদ্ধি পেতে সহযোগিতা করে। এটি মস্তিষ্কের কার্যক্ষমতা বাড়ায় এবং ইনসুলিন কমায়। ইলিশে ভিটামিন এ এবং ওমেগা ৩ থাকে যা অত্যন্ত উপকারী। ইলিশ কোষের জন্যও উপকারী। তাই ডাক্তার অসুস্থ রোগীকে ইলিশ মাছ খেতে বলে।ইলিশ উপকারিতা পাওয়া গেলেও এর অপকারিতাও রয়েছে।
দেশের অর্থনীতিতে বড় অবদান ইলিশ শিল্পের। দেশের মোট উৎপাদিত ইলিশের সিংহভাগই আসে চাঁদপুর বরিশাল অঞ্চল থেকে। ডাক্তাররা অনেক রোগীকে ইলিশ খেতে বলেন। কারন ইংলিশে অনেক উপকার আছে। বাংলাদেশের সিংহভাগ মানুষের প্রিয় খাবারের তালিকায় লিস্ট থাকে। ইলিশ মাছ একটি অতি গুরুত্বপূর্ণ খাবার দেশের সকল মানুষেরই পছন্দ করে। দেশের সাধারণ মানুষ থেকে শুরু করে ভিভিআইপি মানুষ এটি খেতে পছন্দ করে। যেগুলোর মধ্যে ভিটামিন এ থাকে। বাংলাদেশের চাহিদা পূরণ করে ইলিশ মাছ ভারতের রপ্তানি হয। ভারতের পশ্চিমবঙ্গের মানুষ পদ্মা নদীর ইলিশ খুব পছন্দ করে ।
আমাদেরকে মাছে-ভাতে বাঙালি বলা হয়। কারণ বাংলাদেশের মানুষ অনেক পছন্দ করে। আর সেটা যদি হয় ইলিশ তাহলেতো আর কোন কথাই নেই । অদূর ভবিষ্যতে অনেক বৈদেশিক মুদ্রা অর্জন করবে দেশ ইলিশ মাছ থেকে। তাই আমি মনে করি চাঁদপুরের পাশাপাশি সকল জেলাতে ইলিশ চাষের গুরুত্ব বেশি দেওয়া উচিত সরকারের। এখান থেকে বাজারজাত করা হয় বাণিজ্যিকভাবে ব্যবসা শুরু হয়। বাংলাদেশের ইলিশ বিশ্বের সকল দেশের কাছে প্রশংসনীয়। এছাড়াও বিশ্বের অনেক দেশের রপ্তানি হয়। কিন্তু এখন দেশের মানুষের চাহিদা পূরণ করা হয় আগে। বাণিজ্যিক চাষ করার উদ্যোগ নেয়া হচ্ছে। আমি সরকারের উদ্যোগকে সাধুবাদ জানাই কারণ এটি দেশের জন্য একটা ভালো উদ্যোগ। বাংলাদেশ ছাড়াও বাংলাদেশের ইলিশের প্রতি ভারত নির্ভরশীল। ভারত-বাংলাদেশে ইলিশ ছাড়া চলতে পারে না। বাংলাদেশের ইলিশ বিশ্বকাপ সমাদৃত। পরিশেষে একটা কথাই বলতে পারি ইলিশ মাছ বাংলাদেশের অপার সম্ভাবনামায় একটি খাত এবং বাংলাদেশের মানুষের পছন্দনীয় পানিয়র তালিকায় ইলিশ অন্যতম। আমিও বাড়িতে নিজে ইলিশ খাওয়ার জন্য উদ্যোগ নিচ্ছি সেজন্য প্রয়োজনীয় সামগ্রী কিনেছি। পরিশেষে একটা কথাই বলতে চাই, স্বাদে গন্ধে ইলিশ মাছের রাজা।
