Cooking Duck Adobo For Our Dinner

My husband has been craving for an adobo since the other day but the problem was we didn't have extra budget to buy chicken in the market. This morning he decided killing the female duck so I can cook adobo out of it but he was called by his friend so he wasn't able to. In the afternoon he finally had time so he pursued his plan. So while he was doing his thing on the duck I was boiling a pot of water. This will be used in removing the feathers of the ducks. After almost an hour we finally finished removing the feathers. The next thing we did was roast the duck. This was to remove the fats on the ducks body. After roasting 10 minutes on both sides I clean it with water and started chopping it into smaller cuts. While I was chopping the duck, my eldest son prepared the spices so that when I'm done I could immediately cook it. Cooking the ducks took time so it's better to start cooking it early.

I'm also using black pepper and a little amount of brown sugar but these two ingredients aren't on the picture shown above.

Cooking Duck Adobo is not my expertise. My husband cook it more delicious than mine but as time pass by I learned how to cook it the way my husband does. Thanks to him for teaching me how to do it. First I heat the wok and put oil when it's already hot. Then I sauteed the spices. When the garlic turned golden brown I added the duck meat and mix it well. After mixing I put soy sauce, seasoning granules, black pepper and a tablespoon of sugar. Then I mix it thoroughly. When the soy sauce are mix with the meat I added three cups of water then the vinegar. The other ingredients that I put are just estimated. Only the water is measured. After adding water and vinegar I covered the wok. I didn't mix it because I learned that when adding vinegar one must not mix it instead let it simmer first so that the taste wouldn't get ruin. After three minutes of simmering it, I opened the cover then mix it. I also taste it to see if it's okay or not. I didn't get the desired taste so I added a little amount of sugar and seasoning granules then mix it well. I covered the wok and let it simmer for another five minutes. Then mix and taste it again. Finally I get the exact taste that I wanted. I keep repeating these steps; simmer for five mintes and mix it so that all the meat would be cook evenly. I started cooking at around 4:30 PM and finally finished cooking almost six PM. This adobo that I cook is not saucy because we wanted it a little dry. When it's cook we prepared the table and served it.

Here's the cooked Duck Adobo. It's so delicious. The sauce had absorbed well on the duck meat. The first meat that I got is the duck liver and heart. This is my favorite part. After I had eaten it I get pieces of meat. Oh, the dish is so satisfying. We all get full and I'm grateful to God for giving us a delicious meal today.
