For the Filling:
6–7 medium-sized apples
¾ cup granulated sugar
¼ cup brown sugar
1 tablespoon lemon juice
1 teaspoon cinnamon
¼ teaspoon nutmeg
¼ teaspoon salt
2 tablespoons all-purpose flour
1 tablespoon unsalted butter
1. Prepare the Crust:
In a large bowl, mix together the flour, sugar, and salt.
Add the cold butter cubes and use a pastry cutter or your hands to work it into the flour mixture until it resembles coarse crumbs.
Slowly add the ice-cold water, a little at a time, until the dough begins to come together. Divide the dough in half, form into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
2. Make the Apple Filling:
Peel, core, and thinly slice your apples. Toss them with lemon juice to prevent browning.
In a large bowl, combine the apples with granulated sugar, brown sugar, cinnamon, nutmeg, salt, and flour. Let it sit for a few minutes while the juices combine.
- Roll Out the Dough:
Preheat your oven to 425°F (220°C).
On a lightly floured surface, roll out one disc of dough into a circle large enough to fit your pie dish. Carefully transfer it to the pie dish and trim any excess dough from the edges.
- Fill the Pie:
Pour the apple filling into the crust, making sure it’s evenly spread. Dot the filling with small pieces of butter. - Roll Out the Top Crust:
Roll out the second disc of dough and place it over the apples. You can either leave it whole, make a lattice design, or cut small slits for ventilation. Trim and crimp the edges. - Egg Wash:
Brush the top of the pie with the beaten egg wash for a golden brown finish. - Bake:
Bake the pie at 425°F (220°C) for 20 minutes, then reduce the oven temperature to 375°F (190°C) and bake for another 35-40 minutes, until the crust is golden and the filling is bubbly.

- Cool and Serve:
Let the pie cool for at least 2 hours before slicing. Serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream!
