Prepare the Egg Mixture:

In a large bowl, whisk the egg yolks and sugar together. Place the bowl over a pot of simmering water (double boiler method) and whisk constantly for about 10 minutes until the mixture thickens and turns pale yellow. Remove from heat and let it cool slightly.
