  • for pastry
  • 2 cups all purpose flour
  • half teaspoon salt
  • half cup cold unsalted butter
  • one forth cup cold water
  • filling
  • 1 tablespoon olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 carrot
  • 1 celery stalk
  • half lb ground beef or lamb
  • 1 tablespoon tomato paste
  • half cup beef or vegetable broth
  • 1 teaspoon worcestershire sauce
  • Salt and pepper to taste
  • 1 egg

follow these simple steps

  1. In a large mixing bowl combine flour and salt
  2. add cubed butter to the flour mixture and use a pastry cutter or your fingers to mix until it resembles coarse crumbs
  3. a cold water gradually a little at a time and mix until the dough comes together.
  4. make the shape of the dough into a ball wrap it in plastic wrap and refrigerate for at least 30 minutes.
  5. heat olive oil over medium heat.
  6. add onion and garlic to the cook until softened.
  7. add diced carrot and celery to the skillet and cook until tender.
  8. add ground beef or lamb to the skillet and cook until browned.
  9. tomato paste beef or vegetable broth and Worcestershire sauce. Season with salt and pepper to taste.
  10. remove the skillet from heat and let the filling cool slightly.
  11. Preheat your oven to 375f
  12. Roll out the chilled pastry dough on a lightly floured surface to about 1/8 inch thickness.
  13. Using a round cutter or a glass cut out circles from the dough to fit your pie molds
  14. Line the pie molds with the pastry circles, leaving some overhang.
  15. Spoon the meat filling into the pastry lined molds.
  16. Brush the edges of the pastry with beaten egg.
  17. Roll out more pastry dough for the pie lids and place them over the filling.
  18. Press the edges to seal and crimp with a fork.
  19. Brush the tops of the pies with beaten egg for a golden finish.
  20. Using a sharp knife make a small slit on the top of each pie to allow steam to escape.
  21. bake the pies in the preheated oven for 25 30 minutes or until the pastry is golden brown and cooked through.
  22. remove the pies from the oven and let them cool for a few minutes before serving.
