Made with soft and spongy paneer balls soaked in sweetened milk flavored with cardamom and saffron this classic Indian dessert is sure to delight your taste buds

ingredients to be added

  • For the Rasgullas
  • 4 cups full fat milk
  • 2 tablespoons lemon juice or white vinegar
  • half cup sugar
  • 4 cups water
  • For the Milk Syrup
  • 4 cups full fat milk
  • half cup sugar
  • one forth teaspoon cardamom powder
  • A few strands of saffron
  • Chopped nuts for garnish such as pistachios almonds or cashews

Follow these simple

  1. Prepare the rasgullas
  2. In a large pot bring 4 cups of milk to a boil.
  3. Turn off the heat and gradually add lemon juice or vinegar while stirring until the milk curdles and separates into curds and whey.
  4. Rinse the paneer under cold water to remove the sourness of the lemon juice or vinegar.
  5. Gather the edges of the cheesecloth and squeeze out excess water from the paneer. hang the cheesecloth for 30 minutes to drain any remaining water.
  6. transfer the paneer to a flat surface and knead it with your hands until it becomes smooth and soft.
  7. divide the paneer into small portions and roll them into smooth balls without any cracks.
  8. In a separate pot combine 4 cups of water and half cup of sugar. Bring it to a boil.
  9. Add the paneer balls to the boiling sugar syrup and cook them for about 15 20 minutes or until they are soft and spongy.
  10. Once cooked remove the paneer balls from the syrup and let them cool.
  11. Prepare the Milk syrup
  12. In another pot bring 4 cups of milk to a boil.
  13. Add sugar cardamom powder and saffron strands to the boiling milk. Stir well.
  14. simmer the milk over low heat for about 15 20 minutes or until it reduces slightly and thickens.
  15. Remove the pot from the heat and let the milk cool slightly.
  16. Assemble
  17. gently squeeze the excess syrup from the paneer balls and transfer them to the thickened milk.
  18. refrigerate the rasmalai for a few hours to chill and allow the flavors to meld.
  19. Before serving garnish the rasmalai with chopped nuts.
  20. Serve chilled and enjoy the creamy and delicious homemade rasmalai
