  • For the dough
  • 2 cups all purpose flour
  • one fourth cup vegetable oil
  • halfteaspoon salt
  • Cold water
  • For the filling:
  • 2 medium potatoes boiled and mashed
  • half cup green peas boiled
  • 1 small onion finely chopped
  • 2 green chilies finely chopped
  • 1 teaspoon ginger paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • half teaspoon turmeric powder
  • half teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions to be followed

Follow these steps

  1. In a bowl mix together flour salt and vegetable oil until it resembles breadcrumbs.
  2. Add cold water gradually and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
  3. In a separate pan heat oil and add cumin seeds. Once they splutter add chopped onion and green chilies. Saute until onions are translucent.
  4. Add ginger paste coriander powder turmeric powder and salt. Cook for a minute.
  5. Add mashed potatoes boiled green peas garam masala and lemon juice. Mix well and cook for another 2 3 minutes. Remove from heat and let the filling cool.
  6. Divide the dough into small balls. Roll each ball into a thin oval shaped sheet.
  7. Cut the rolled sheet in half to make two semi circles.
  8. Take one semi circle and fold it into a cone shape sealing the edges with water.
  9. Fill the cone with the prepared potato filling and seal the top edge to form a triangle shaped samosa.
  10. Repeat the process with the remaining dough and filling.
  11. Heat oil in a deep frying pan over medium heat. Fry the samosas until they are golden brown and crispy.
  12. Remove from oil and drain excess oil on a paper towel.
  13. Serve hot with chutney or sauce of your choice.
