- For the dough
- 2 cups all purpose flour
- one fourth cup vegetable oil
- halfteaspoon salt
- Cold water
- For the filling:
- 2 medium potatoes boiled and mashed
- half cup green peas boiled
- 1 small onion finely chopped
- 2 green chilies finely chopped
- 1 teaspoon ginger paste
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- half teaspoon turmeric powder
- half teaspoon garam masala
- 1 tablespoon lemon juice
- Salt to taste

Follow these steps
- In a bowl mix together flour salt and vegetable oil until it resembles breadcrumbs.
- Add cold water gradually and knead into a firm dough. Cover with a damp cloth and let it rest for 30 minutes.
- In a separate pan heat oil and add cumin seeds. Once they splutter add chopped onion and green chilies. Saute until onions are translucent.
- Add ginger paste coriander powder turmeric powder and salt. Cook for a minute.
- Add mashed potatoes boiled green peas garam masala and lemon juice. Mix well and cook for another 2 3 minutes. Remove from heat and let the filling cool.
- Divide the dough into small balls. Roll each ball into a thin oval shaped sheet.
- Cut the rolled sheet in half to make two semi circles.
- Take one semi circle and fold it into a cone shape sealing the edges with water.
- Fill the cone with the prepared potato filling and seal the top edge to form a triangle shaped samosa.
- Repeat the process with the remaining dough and filling.
- Heat oil in a deep frying pan over medium heat. Fry the samosas until they are golden brown and crispy.
- Remove from oil and drain excess oil on a paper towel.
- Serve hot with chutney or sauce of your choice.
