Ice Cream Sandwich Recipe

• 1 quart of ice cream
• chocolate chips sprinkles or crushed nuts for coating

Instructions to be followed

1. Let the ice cream sit at room temperature for about 5-10 minutes to soften slightly.
2. Place a scoop of ice cream onto the flat side of one cookie.
3. Press another cookie on top to make a sandwich gently pressing down to spread the ice cream evenly to the edges.
4. If desired roll the edges of the ice cream in chocolate chips sprinkles or crushed nuts.
5. Wrap each ice cream sandwich in plastic wrap and place them in the freezer for at least 1 hour to firm up.
