Ingredients:
For the muffins
1 cup wheat flour
1/2 cup brown sugar or raw cane sugar
1 teaspoon baking powder
1 tablespoon ground cinnamon
1 cup grated carrots
1/2 cup milk
3 eggs
1/4 cup vegetable oil
Lemon zest (to taste)
For the Cheese Glaze
1/4 cup cream cheese (Philadelphia or Mascarpone)
4 tablespoons condensed milk
Sliced almonds (to taste)
Makes 15 servings
Making the Muffins
Step 1
In a bowl, combine all the dry ingredients (flour, cinnamon powder, baking powder). Add the cane or brown sugar and lemon zest. Mix all these ingredients well and add the grated carrot at the end.
Step 2
Place all the liquid ingredients (eggs, milk, vegetable oil) in a bowl, mix well and pour over the dry ingredients. Mix with a fork until you get a homogeneous paste.
Mix with twirling motions to incorporate air into the batter.
Step 3
Grease the tins with vegetable oil using a pastry brush, then flour well.
Pour in the mixture and bake for 25 minutes at 180° C.
Remove from the oven and cool on wire racks.
Making the Cheese Glaze
Cheese glaze is very easy to make. Place the cream cheese in a bowl and mash with a fork until you get a uniform texture. Try to have the cheese at room temperature, this will make it easier.
When the cheese is even and creamy, add the condensed milk and mix well.
Refrigerate until ready to use.
Decorating the Muffins
Step 1
Toast the sliced almonds in a saucepan over medium heat. Stir constantly to prevent them from burning.
Step 2
Take each muffin and carefully spread the top with the cheese glaze.
Place the muffins on a rack so the frosting is well distributed and sprinkle the toasted almonds on top.
These muffins are very soft and you can appreciate all the flavors of the ingredients that make up the muffin.
My secret to bringing out the flavors of the carrot and cinnamon is the lemon zest. It allows the flavors to complement each other.
Besides being a caress to the palate, these carrot muffins have that touch of crunch and delicate madness with toasted almonds.
Really, these muffins are a real treat and practical because you do not dirty many utensils in the kitchen. Try them at home!
