Gotta Love Roast Beef!!!

Been a weird day all round. Weather wise, mood wise and everything else, lol - so decided to be lazy and throw a beef roast into the oven. I don't often opt for beef when cooking a roast, but they are good from time to time. My first choice is normally lamb.

I do enjoy the simplicity of a beef roast though. A few insertions with garlic and rosemary around the roast, a little freshly ground salt and pepper and then a little olive oil.

Pop that baby into the oven, freestanding on the rack, with a drip tray at the bottom for 30 min at 190 degrees Celsius to brown it, then reduce the heat to 105 degrees for another 90 minutes. Take it out and allow it to rest for 20 min and bobs your uncle!
