I don't know about all of you... but I am an absolute potato junkie!!! Well, technically I am just a CARB junkie if I am completely honest, but potatoes are a serious weakness of mine and I will take them any way you server them!!! Deep fried, mashed, roasted, boiled, baked it does not matter! I would genuinely eat a potato with every meal if I could, and my family may argue that statement comes close to the truth!
So, with that shining light on the traditional potato - let me just say that this is not what the post is about, lol! Nope - In the interests of my waistline I do give the carbs a miss every now and then, lol. I lived completely low carb for almost four years and though I don't do that anymore... it certainly did teach me to get really creative with foods - and this has come in super hands when entertaining for others... especially when those "others" are in fact eating low carb - which so many people appear to be doing these days!
Sweet Little Potato Salad

Grab a few sweet potatoes, wash, peel and slice them. Pop the potatoes into a pot of boiling water until they are cooked but not falling apart. Sweet potato generally cooks faster than traditional potato - so about 10 minutes in rapidly boiling water should do the trick - but just keep an eye on them because the timing will also depend on how thick or thin you slice them. Allow them to cool and then pop them into the fridge for an hour ow two... just so they don't break apart when you mix them all up later.
Once they have chilled, remove them from the fridge and then you can start adding all the fun, tasty stuff! I added some diced sweet and sour gherkins / pickles, diced spring onion, chopped parsley, salt, pepper, a little potato spice, mayonnaise and about a half a tub of fresh cream. Of those ingredients... the REALLY essential thing is the CREAM! Sweet potato is a lot more "watery" than traditional potato and if you only add mayonnaise it is just NOT going to taste great... trust me, I speak from experience!!!
That is it! - Not complicated, and a wonderful low carb alternative! If you would like to make a really amazing visual impact, then you can top it with some colourful micro herbs and viola flowers, which are also edible! I always have violas growing everywhere in my garden because they are a gorgeous looking garnish for so many things and they self seed like weeds!
