I have this old lady neighbor which lives a few houses away from my house and her way of earning a living is through taking some orders from other people on what they want to cook the next day. She is somewhat a vendor but in this case now, she is not hawking fish, chicken eat, and vegetables in the street anymore but rather taking orders from her own set of customers and in that way she will get a sure profit and at the same time she will not go home with unbought raw food. Well I can say that it is indeed a brilliant way to peddle raw food for the households to cook next day and I think that she is the only one doing it with the assistance of her daughter which accompany her whenever they go and then buy the said raw foods and deliver those to their customers.
My mother in the other hand when she receives the oysters which are hand to her either by her daughter or her son actually are already de-shelled and is conveniently wrapped in a sealed plastic bag, one common way of selling oysters if they are not sold just to prevent them from getting bad. The said oysters are good for cooking and not eaten raw but before, I happen to tell my mother to prepare it with just putting vinegar in it and some ginger, chopped onions, and seasoning. But because they are much oysters in one bag, my mother's preparation quite produces a very acidic dish which doesn't fit my taste. So lately I would tell her to fry the sad oysters so that I can get to eat them in a different way.
Bit this is not the way I want them to be cooked, I told mother to just fry them and serve it plain with just some salt and pepper and seasonings to give them some added flavor and taste. But my mother turned it into an omelet and even added onions into it and so, that is what I had for my late lunch-diner combo yesterday. However, it is not actually my main dish to eat with rice but what we call here locally as "burong talangka", it is a preparation of eating salted fresh river crabs and is not actually fermented and they only call it that because after being bought from the market, it is sprinkled with salt and then put aside to be eaten later in the day that same day with rice. I preferred not to photograph the said freshwater river crabs because it might offend some people because it is within the exotic food category which is why I just chose to share this photo of oyster omelet instead.
The "burong talangka" or fermented crab in English terms is a very special food because it is one of the most delicious viand to eat because of its palatable taste when mixed with rice, the fat of the crabs are mixed with rice and is flavored by a dip made out from fish sauce and our local version of lemon which is called "Calamasi" a small sour citrus fruit and imparts a sour and fragrant citrusy flavor to many of our local dishes and used as an ingredient to marinades, sauces, and dips, and even a refreshing beverage and much batter-tasting compared to lemonade in my opinion. Anyway, my old lady neighbor had grew fond of me because I think I happen to inspire her because of my struggles with my own health issues particularly in being a long-time dialysis patient because I had been a dialysis patient for more than two decades already and I guess that it makes her very proud of me in fighting this one major odd thing in my life. Now, because she knows that I do like to eat oysters because of its nutritional value, I guess that for as long as we both live, I will still be receiving bunches of oysters from her great good heart, may God bless her and her family always.
