If you are familiar with nixtamalized corn or "Masa", then you will have an idea about this local food cake or pudding which is what we locally call as "Suman sa Lihiya" or Suman cooked in Lye water and "Suman being a name of glutinous rice cooked wrapped in banana leaves and there are varieties of Suman products ranging from the traditional plain sticky rice pre-cooked with coconut water and cream plus some salt and then wrapped in banana leaves before being steamed for a long while in a steamer until it is thoroughly cooked with a distinct pliable consistency.

Some Suman recipes calls for having some ingredients like chocolate, with extra sugar, some requires milk, other suman using grated cassava tuber instead of glutinous rice and it varies from region to region. Now, what I had before my morning lunch yesterday was one of the most delicious preparation of Suman rice cake is this type where it is cooked with lye water. The result is this product where it gives the Suman a very slightly bitter but pleasant taste in a very sticky and firm consistency. It has to be eaten with some grated mature coconut nut or meat and some sugar with crushed toasted sesame seeds which makes this rice cake its sweet and creamy taste with its distinct pleasant lye flavor and its very firm and sticky consistency plus the essence of the aroma of the banana leaves which it is wrapped into is giving it a more pleasant to eat flavor. The main cake or pudding doesn't have salt nor sugar and that is why it really calls for having both the grated mature coconut and the sugar with crushed toasted Sesame seeds otherwise it will not be anymore pleasant to be had as a traditional local snack.

However it will not have its complete taste as it should if you will just have it with sugar as its main sweetener because it has to have some crushed toasted Sesame seeds. For some reason, the vendor just sells it without such vital ingredient which is why I wasn't able to enjoy it fully but regardless it still tastes nice because I haven't had it for a while lately. Another glutinous rice pudding or rice cake recipe which calls for the same sugar and crushed toasted Sesame seed ingredient is what we call as "Palitaw" and is made out of glutinous rice flour made out of fashioned rice balls flattened and shaped like a tongue and boiled in hot water until they float in the surface. They are then "breaded' with grated mature coconut meat and is eaten with sugar with Sesame seeds and is truly pleasant to eat. So like the Suman sa lihiya (Suman cooked in Lye water) its general taste will not be complete if it is not served with the said sugar with crushed toasted Sesame seeds. That is why some people would refrain from buying the Suman in lye water if they will not be assured that they can also get the sugar with Sesame seeds because it is really the vital ingredient of the said of this local rice cake/pudding.

There was a memorable time when me and my siblings were just kids that my mother decided to make a basic Suman cake/pudding, that traditional Suman which is made out of glutinous rice and lightly seasoned with just salt, wrapped in banana leaves, and then steamed for about an hour or so but my mother never made another one after that and we did that maybe in the mid-80s and I missed doing it although we can buy some if we order even now. However due to the sellers of it not making the original recipe about the cooking time plus they skimp on the contents as well, it does not favor the buyer in ordering it anymore. That is why I am frustrated about the way people makes our local traditional foodstuffs here in my country as they always tend to sacrifice quality over profits not realizing that if they just satisfies customer needs, they they will truly get a repeat customer.
